Makes One 9-inch Deep Dish Pie
Pumpkin Seed Crust:
- 2 cups coarsely crushed graham crackers
- ½ cup Happiness Foods TM Sprouted Pumpkin Seeds
- ¼ cup all-purpose flour
- ½ cup dark brown sugar or maple sugar
- Pinch of sea salt
- 8 tablespoons unsalted butter, melted
Filling:
- 1 can (15 oz) 100% pure pumpkin (not pumpkin pie filling)
- 1 ½ cups half and half
- ¾ cup granulated sugar
- ¼ cup maple syrup
- 2 large eggs, lightly beaten
- 2 teaspoons pumpkin pie spice (see below)
- ¼ teaspoons fine-grain sea salt
Pumpkin Spice Blend:
- 2 ½ teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon freshly grated nutmeg
- ½teaspoon ground cloves
- Preheat oven to 350ºF. In the bowl of a food processor fitted with a stainless steel S-blade, combine graham crackers, Happiness Foods™ Sprouted Pumpkin Seeds, flour, brown sugar, and salt. Pulse until the mixture resembles coarse sand. Add melted butter and pulse to combine.Transfer the mixture to a deep-dish pie plate or springform pan and press evenly, covering the sides and bottom of the dish. Chill in the refrigerator for 15-20 minutes to set.
- In a large bowl, combine pumpkin, half and half, granulated sugar, maple syrup, eggs, 3 teaspoons of pumpkin pie spice (recipe above), and salt; mix well. Remove crust from the refrigerator and fill with pumpkin mixture.
- Place the pie on a rimmed baking sheet. Bake for 30 minutes and check on pie. Rotate, if necessary, and bake for an additional 40-60 minutes, or until a knife inserted one inch from the crust comes out clean. Cool on a wire rack completely. Garnish with more Happiness Foods TM Sprouted Pumpkin Seeds and serve with lightly whipped cream or ice cream.

NOTES: To make pumpkin spice blend, combine all ingredients in a small bowl and mix thoroughly. Store in a small jar or airtight container. Pie can be made up to a day in advance and stored in the refrigerator.
