  • ¼ teaspoons fine-grain sea salt

  • 2 ½ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon freshly grated nutmeg

preparation
STEP 1
Preheat oven to 350ºF. In the bowl of a food processor fitted with a stainless steel S-blade, combine graham crackers, Happiness FoodsTM Sprouted Pumpkin Seeds, flour, brown sugar, and salt. Pulse until the mixture resembles coarse sand. Add melted butter and pulse to combine.Transfer the mixture to a deep-dish pie plate or springform pan and press evenly, covering the sides and bottom of the dish. Chill in the refrigerator for 15-20 minutes to set.
STEP 3
Place the pie on a rimmed baking sheet. Bake for 30 minutes and check on pie. Rotate, if necessary, and bake for an additional 40-60 minutes, or until a knife inserted one inch from the crust comes out clean. Cool on a wire rack completely. Garnish with more Happiness FoodsTM Sprouted Pumpkin Seeds and serve with lightly whipped cream or ice cream.
STEP 2
In a large bowl, combine pumpkin, half and half, granulated sugar, maple syrup, eggs, 3 teaspoons of pumpkin pie spice (recipe above), and salt; mix well. Remove crust from the refrigerator and fill with pumpkin mixture.
NOTES
To make pumpkin spice blend, combine all ingredients in a small bowl and mix thoroughly. Store in a small jar or airtight container. Pie can be made up to a day in advance and stored in the refrigerator.
