ROASTED BEET & CITRUS SALAD WITH LABNE
ingredients
  • 2 bunches of beets, red & yellow, if available
  • 2 oranges, like red cara cara, blood, or navel
  • 1 cup Labne
  • 1 medium shallot, sliced very thinly
  • 3 tablespoons white wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Whole Grain mustard
  • ½ cup Happiness Foods™ Sprouted Pumpkin Seeds
  • Fresh dill, for garnish
  • Extra Virgin Olive Oil
  • Salt & freshly ground black pepper
preparation
STEP 1
Preheat oven to 400°F. Place two squares of foil on a large baking sheet. Place beets on top (if using two colors of beets, keep them separate). Drizzle with enough olive oil to lightly coat. Bring the ends of tinfoil together to enclose the beets in a packet. Bake until fork-tender, 45 to 60 minutes. Let cool slightly, then use the edge of a spoon to peel off the skins. Slice the beets into bite-sized wedges. Set aside.
STEP 2
While the beets roast, slice the top and bottoms off of the oranges and place them cut side down on the cutting board. Moving around the orange, slice away the peel until none of the white pith remains. Slice the peeled oranges crosswise into ¼-inch thick rounds. Set aside until it’s time to assemble the salad.
STEP 3
In a medium bowl, combine the vinegar, honey, Dijon and whole grain mustards, and a pinch of salt. Whisk to combine. In a slow steady stream, drizzle in ⅓ cup of olive oil, keeping the vinaigrette emulsified by whisking constantly. Stir in shallots to combine.
STEP 4
To assemble the salad just before serving, spread the labne on a platter or plate. Arrange half of the orange slices as a bed for the beets. Top oranges with beets, evenly alternating colors, if using different colors. Tuck in the remaining orange slices, and pour vinaigrette over the salad, spooning the shallots evenly around the plate.
STEP 5
Sprinkle the salad with Happiness Foods™ Sprouted Pumpkin Seeds and garnish with sprigs of fresh dill. Serve immediately.
